Why are water storage tanks made out of stainless steel yet the plumbing in the home is copper?

If you are trying to buy a metal tank for storing potable water then it will almost alway be made out of stainless steel. However, when it comes to plumbing with metal you are normally going to see copper. As a side not it seems like breweries as well as whiskey, scotch and bourbon distilleries seem to prefer copper tanks and pipes while wineries, vodka and rum seem to choose tanks and pipes made from stainless steel. It appears to me that copper can do both jobs yet copper tanks are nowhere to be found when it comes to home use. Why is that?

Copper is not often used in new construction anymore, but it is used for water systems because of it doesn't rust and is very easy to bend. It is soft and therefore creates good seals at joints and it also heats up quickly and bonds well with silver solder.
It is not used for tanks in the home because of its softness and its cost. Copper is far more expensive than stainless steel, and to make a tank that wont eventually collapse under its own weight you have to use a lot more metal, making the tank excessively heavy and expensive.

can 304 stainless steel tanks used for water storage be used for wine storage?

The short answer is MAYBE -

Types 304 and 316 are widely used in the wine industry, providing corrosion resistance to the various alkalis, acids, sterilants, and fermentation by-products. For wine, Type 304 is satisfactory for crushers, conveyors, presses, filters and other assorted components. Type 316 is specified for applications using special cleaning compounds and for the production of wine vinegars in which the non-moly grades (eg. 304) are subject to attack by acetic acid.

Depending on the exact nature of your process/chemicals/fermentation process - 304 may not be adequate, whereas 316 may be more appropriate. So be careful; you may want to spend some time performing some corrosion testing.

Do homes in the desert that are beyond the water main get water delivered?

I have noticed in some of the remote areas of Southern California (Malibu mountains) there are homes with large steel storage tanks outside the house, they look like water tanks and the houses are in arid areas with no groundwater, and no fire hydrants around, I assume there are no water services to the homes. Do these places have to pay for water delivery from a truck? how much would it cost?

The majority of water is collected from rain water, and the rest is topped up from a water truck. In Australia, it costs about $100 to get two tanks filled up.

Hope this helps.
